Pancakes from Scratch

Materials
2 c. Flour
1 c. Confectioner's Sugar
1 tbsp Baking Powder
1 tsp Salt
2 c. Milk
3 eggs

Directions
Sift flour, sugar, baking powder and salt. Set aside. Blend milk and eggs well. Stir into flour mixture. Use ladle and pour 6-8 inch round cakes onto medium hot skillet. Flip when bubbles appear throughout pancake.

You may have to experiment a little to get the heat just right with your skillet. I use a little vegetable oil to lightly coat the skillet before I heat it up. This keeps them from sticking. Pam cooking spray works well also.

  1. I put some blackberries in the batter this morning. They are so good, but I realized you have to turn the heat down a bit and cook a bit longer.
